Feedlot cattle consume a diet high in grain which lowers the pH of their gut environment which can present as acidosis and is favourable to the growth of that E. Coli strain. The risk then is of faecal contamination during the milk or meat processing with lower grade meats such as that used for ground beef being at most risk.

Due to the ability of E. Coli O157:H7 to survive low pH digestive environments it is also able to do so in the human gut, unlike most other E. Coli strains, so becomes problematic when meat or dairy is contaminated with it leading to potentially very serious food poisoning. For this reason food production systems in the US are very strict on the likes of food handling and processing to minimise risk of contamination. Raw milk is heavily restricted and minimal cooking methods of high risk meat such as ground beef and 'rare' steaks is dissuaded, including by way of regulation.
