As others have said, wifi calling is just a feature on your mobile phone that allows you to make calls out over wifi if you have no signal from a cell tower.
It sounds like you were looking at swapping your SSD over to the new system, there is one legal way you can possibly still upgrade to windows 11 for free, you need to sign in your existing computer to a microsoft account and then add the windows licence to that account.
Then you can re-activate the windows 10 system on the new hardware and Microsoft will link the licence key over, then you can upgrade to windows 11 on the new hardware.
Its a bit of messing around, but it should work.
