Having made brawn in the past from a pigs head I know there is plenty of protein to be harvested limited only by how keen you are. Eyes, brain, nasal tissues and tongue are all there for the taking so it would come down to a return on effort involved in a commercial situation and mechanically harvesting minimises the effort involved.
